FAIRFIELD — Tamer Totah is about to get the Rockville Bar & Grill ready for its second quarter-century with some changes.
He will close the Rockville Corner business Aug. 20 and reopen it Sept. 1 as an Italian restaurant. Salvio Defuria, who previously operated Salvio’s Italian Kitchen on Parker Road, will be the chef.
“People really loved his food,” Totah said. “He has a following. He has a great skill for food and really beautiful dishes.”
Since 1989, Rockville Bar & Grill has served steaks, seafood, pasta and other cuisine. Totah decided it’s time for a new direction.
“I think a good Italian restaurant in the greater Fairfield area – there’s a need for it,” Totah said. “There’s a lot of bars and grills here.”
His restaurant, also known as the Rockville Inn, is located in a building at the corner of Rockville and Suisun Valley roads, in a small commercial outpost of Suisun Valley. The Muratori family during the 1940s and 1950s operated an Italian eatery in the building, Totah said.
“This gets back to the roots, to the history of it all,” Totah said.
The brief closing is needed to do such things as rearrange the kitchen, train staff about the new menu items and freshen up the building’s interior, Totah said. The restaurant will honor prior commitments for its banquet room, he said.
Rumors have been circulating that he’s selling the restaurant or that the restaurant is closing, Totah said. None are true.
He’s worked at the Rockville Bar & Grill since 1989, when his father and uncle started the business. Totah was 19 years old at the time. He bought the business from his relatives in the mid-1990s.
“I’m not going anywhere,” Totah said. “I’ve been here and I’m planning on being here another 25 years.”
That would make it an even 50 years for Totah at Rockville Corner. Then, at age 69, he’ll retire, he said.
Rockville Bar & Grill is located at 4163 Suisun Valley Road. Lunch is served from 11 a.m. to 2:30 p.m. and dinner from 5 to 9 p.m. and to 10 p.m. Friday and Saturday. To reach the restaurant, call 864-4325.
