Il Fiorello schedules more cooking classes

FAIRFIELD — Il Fiorello Olive Oil Co. in Suisun Valley will host several upcoming cooking classes.

Balsamic Vinegar Tasting will take place from 6 to 8 p.m. June 17. Participants will experience a guided tasting of rare, aged Italian vinegars, explore food parings and learn about the production of balsamic vinegar. Il Fiorello owner Ann Sievers will lead the class.

French Provencal Cuisine will take place from 3 to 6 p.m. June 29. Chef Marvin Martin will show how to prepare such dishes at flageolet bean cake with rouille, lamb and mushroom crépinettes, frisée salad and summer vegetable soup with pistou.

Olive Oil Tasting Class will be from 6 to 8 p.m. July 9. Among other things, participants will taste a variety of single-varietal oils and blends, discuss the culinary application of different oils and tour olive groves and the olive mill to understand the olive oil making process. Sievers and Kathryn Tomajan, a certified olive oil taster, are leading the class.

Italy’s Venetian Cuisine is from 5 to 6 p.m. July 20. Martin will lead the class that focuses on such dishes as carpaccio di cipriana, which is raw beef filet with mustard aioli, capers and arugula.
